The next morning, the cherries are removed from the bags and, using a machine that Jairo designed himself, cherries with lower density or defects are sorted out. After this first, mechanical sorting, the cherries are sorted by hand and separated into three different categories depending on their ripeness. While the cherries that are not perfectly ripe yet will undergo a longer fermentation and be used for washed and honey-processed lots, only the perfectly ripe cherries are used for naturals. These are put into sealed plastic tanks for four days of carbonic maceration. Besides constantly monitoring the pH value during this time, they make sure the temperature does not climb above 24°C. According to LACIA, a cool and controlled fermentation is key in order to maintain the floral notes of the coffee. The last step is a controlled drying on raised beds to reach a moisture content of 10.5-11.5%. Ethanol is obtained from the fermented syrup of sugar cane, which is available in large quantities in Colombia. This alcohol is mixed with acetic acid to produce ethyl acetate, which is then diluted with water. The coffee beans are first steamed to open the pore structure and then soaked in the liquid. This binds the caffeine and is then disposed of. The process is repeated several time and each time more caffeine is transported out of the beans. Cold coffee in cans – shelf-stable and without additives.

This new batch of our nitro coffee was cold brewed with Nano Challa, a washed Ethiopian coffee. Nitrogen was added not just for shelf-life but for a smooth mouthfeel while the coffee was canned, right before pasteurization.

Nitro Coffee is pure, cold coffee, super balanced in taste with a subtle, nuanced acidity. It is clear as water due to the cold brewed process. The result is clear yet juicy, nuanced and complex. The nitrogen adds a smooth, soft texture to the drink. Caffeine levels are comparable to a hot filter coffee of the same size, which means it's definitely able to wake you up. Whether on a sunny terrace, at the pool, as a pre-workout drink before exercising at the gym, or even in winter on the ski slope: There's never a wrong time for nitro.

Our nitro cold brew is pasteurized and shelf-stable for several months. For the best experience, we recommend storing the cans in the refrigerator, briefly shaking them before opening, waiting for 20 seconds to avoid splashing (It does not contain Co2 or bubbles) and then serving the coffee in a glass, perhaps on ice, or drink it right out of the can.

Specifications:

Contains: 6x 250 ml

Did you know that we now also offer a cool fridge with glass-door that comes with a whole lot of Nitro Coffee?

//cdn.shopify.com/s/files/1/0836/0325/9735/files/Drip-Roasters-Nitro-Cold-Brew-Coffee-Ethiopia-Nano-Challa-2026-1.png?v=1784644067
