A fruity note of blackcurrant stands out the most for us, while there is a lot more going on. The intense aroma from the anaerobic fermentation is harmoniously paired with a juicy brightness and a lot of clarity, which we attribute to the washed process.\u003c\/p\u003e\n\u003cp\u003eAfter the harvest, the coffee cherries are floated to remove defects and then pulped. The coffee is then fermented in tanks for 12-14 hours. After this initial fermentation, they are rinsed off in water channels and graded by density at the same time. The densest beans are then taken into tanks for a secondary fermentation – this one being a short 8-hour anaerobic fermentation. After another round of sorting on pre-drying tables, the coffee is dried on raised beds for 16-20 days.\u003c\/p\u003e\n\u003cp\u003eThis coffee was produced and processed exclusively by women. While women carry out the majority of the work in households as well as in coffee production, they receive only a small fraction of the proceeds in many other places. With over 70% of Gasharu's employees being women, the company named this coffee Rugori to honor their invaluable contributions to the coffee community.
